Pistachio encrusted Salmon topped with spinach puree
An easy way to spice up your favorite today.
Ingredients
4 Salmon fillets (approx. 5 ounces each)
1 cup finely chopped pistachios
6 shallots
2 cups baby spinach leaves
1 tbsp. chili flakes
4 tbsp. butter
1 cup cream
Salt & pepper
5 tbsp. vegetable oil
Directions
1.Roll salmon fillets in chopped pistachios, salt and pepper
2.Heat up frying pan and sear salmon fillets in oil on each side for 10 seconds
3.After lightly cooking salmon on each side bake in oven for approx. 7 minutes at 350 degrees.
4.Heat up small pot and Sautee shallots with butter until caramelized, then add spinach leaves, chili peppers, salt, pepper and cream and cook for 5 minutes at medium heat
6.Put ingredients into blender and blend until all combined.
7.Place salmon fillets on serving platter and spoon sauce from blender on top of salmon
and serve.
